We enjoyed Easter Sunday brunch with our family that just gained a new member. Four days ago our daughter Lisa had a baby, and we were excited to celebrate his first Easter together!
Our brunch was joyful, full of good food and conversations. At the end of the meal, everyone stated they have no room left for dessert… Dessert was White Chocolate Mousse layered with some strawberry cake, our Lime Mint Honey Jelly with berries on top! You better believe everyone quickly changed their minds! White chocolate mousse with Lime Mint honey jelly dessert is so elegant and festive, perfect for Easter or any springtime celebration! Lime and mint flavors of honey jelly help to cut through richness of mousse, adding light and fresh flavor to it. The combination of white chocolate and our Lime Mint honey jelly pairs well with blackberries or other berries of your choice. Very easy to make, you should try it too!
How to make White chocolate mousse: Ingredients: 4 egg yolks 1/4 cup sugar 1 cup whipping (heavy) cream 12 oz white chocolate morsels 1 1/2 cups whipping (heavy) cream
Steps: 1. Beat egg yolks in small bowl with electric mixer on high speed about 3 minutes or until thick and lemon colored. Gradually beat in sugar. 2. Heat 1 cup whipping cream in 2-quart saucepan over medium heat just until hot. Gradually stir at least half of the cream into egg yolk mixture, then stir back into hot cream in saucepan. Cook over low heat about 5 minutes, stirring constantly, until mixture thickens (do not boil). 3. Stir in chocolate morsels until melted. Cover and refrigerate about 2 hours, stirring occasionally, just until chilled. 4. Beat 1 1/2 cups whipping cream with electric mixer on high speed until stiff. Fold refrigerated mixture into whipped cream. Spoon mixture into parfait or wine glasses.
